Edible Roots on Parade

Students from Sadie Rosenthal’s biology class presented “edible roots” on Monday. Not only were their studies tied to Cascadia’s integrated learning theme, they studied the cultural, nutritional, and medicinal properties of roots, grew plants, wrote and read poetry, prepared dishes, and created boards. The Argentinian sweet potato treat was fantastic; the daikon radish poem (“I’ve arrived at this blue collar affair in a white suit”) was a standout; as for the burdock root, you may watch this short video.
